My Grandmother's Recipe

Early dismissal from school every Wednesday meant an afternoon of baking adventures with my grandparents. It was in their Brooklyn kitchen that I learned time-honored baking techniques and classic family recipes, including cookie brittle.  

Made with just a few, honest ingredients and baked in the oven, we called it “cookie brittle” for its crumbly, grainy texture.

The dough embodies a back-to-basics classicism with four core ingredients: 

flour, butter, sugar, salt.

Infused with real foods from the Italian table ...

fresh organic rosemary

grated parmesan

espresso coffee

roasted nuts

fresh fruit

... the dough becomes Brooklyn Brittle.

Faithful to my baking beginnings, I continue to make Brooklyn Brittle by hand, using my grandparents' recipe as the landscape for imaginative and Italian-inspired flavor combinations.
